Homemade Lime Cordial Recipe | The Bar Guys
This homemade lime cordial recipe is fresh, sharp, naturally zesty, and perfect for creating an incredible Gimlet cocktail at home. At The Bar Guys, we wanted to recreate the tart, bitter edge of classic lime cordial — but without the artificial flavours, colours, and syrups found in supermarket versions.
For years, I’ve had a bit of a love-hate relationship with the Gimlet cocktail. Fresh lime juice versions can taste clean and refreshing, but they often miss that sharp, bracing bite that makes a proper Gimlet so memorable. Traditional supermarket lime cordial delivers that tart edge perfectly, but unfortunately it also comes packed with artificial flavours, colours, and overly sweet syrups.
So naturally, I became slightly obsessed with creating a homemade lime cordial recipe that captured the best parts of a classic cordial while using only fresh ingredients.
After plenty of trial and error — and several pretty questionable batches along the way — I finally landed on something that genuinely works. This recipe keeps the bright citrus flavour, balanced sweetness, and subtle bitterness that make a Gimlet cocktail so delicious, while still tasting natural and fresh.
Best of all, it’s incredibly simple to make.
Unlike some complicated cocktail recipes that require specialist equipment or weeks of steeping, this homemade lime cordial recipe takes around five minutes to prepare using ingredients you probably already have in your kitchen.
Why Homemade Lime Cordial Tastes Better
A lot of bartenders create “quick” lime cordial by simply mixing fresh lime juice and sugar. While that can taste nice, it usually lacks the bitterness and sharp citrus oils that give traditional lime cordial its signature character.
The secret is using fresh lime zest as well as juice. The oils from the zest create a much deeper flavour and give the cordial that classic Gimlet edge without relying on artificial ingredients.

Homemade Lime Cordial Recipe
Ingredients
- 2 fresh limes
- 250g white sugar
- 50ml water
Method
- Finely grate the zest from both limes into a saucepan.
- Squeeze the lime juice into a measuring jug. Once you have roughly 75ml of juice, top it up with water until you reach 125ml of liquid in total.
- Pour the liquid into the saucepan with the lime zest and sugar.
- Heat gently over a low temperature, stirring occasionally until the sugar fully dissolves. Do not allow the mixture to boil.
- Strain the mixture into a heatproof jug and leave it to cool completely.
- Store the cordial in the fridge for a couple of days to allow the flavours to develop fully.
- Finally, double strain the homemade lime cordial into a clean bottle or jar, removing all remaining zest.
The result is bright, tart, fresh, slightly bitter, and absolutely delicious.

The Bar Guys Gimlet Cocktail Recipe
Ingredients
- 50ml homemade lime cordial
- 50ml gin
- Ice cubes
- Lime twist or edible flower for garnish
Method
- Place a martini or coupe glass into the fridge to chill.
- Add the homemade lime cordial and gin into a mixing glass or jug.
- Add a handful of ice cubes and stir until the outside of the glass feels very cold.
- Strain into your chilled cocktail glass.
- Garnish with a lime twist or edible flower.
